It has so much flavor, from the sauted onions and garlic to the salty Parmesan cheese, to the rich cream. The savory chicken and Italian herbs makes it even better. The sauce is both creamy and tomato-y, the best of both worlds. If you love a main dish that’s easy to make, uses simple ingredients, and tastes amazing, then this rotini pasta is for you.

Main ingredients

  • Chicken. Use dark chicken meat or chicken ،.
  • Pasta. Rotini is used for this recipe.
  • Olive Oil. Or avocado oil.
  • Onion. Yellow or white onion.
  • Garlic. Fresh is best here.
  • Tomato Paste.
  • Heavy Cream. Or Half & Half.
  • Parmesan Cheese. Or Pecorino Romano.
  • Dried Basil. Or dried Italian herbs. Fresh herbs can be used as well.
  • Seasoning. Salt, pepper, and red pepper flakes.

How to make Rotini Pasta with Chicken

1. Add the pasta to the salted boiling water and cook according to the package instructions. Usually, rotini pasta cooks in 12-13 minutes.

2. While pasta is cooking add olive oil and onion to a large s،et. Cook for about 5 minutes, until the onions soften and s، to brown.

3. Add garlic, tomato paste, and chicken and cook for about 7-8 minutes on medium heat, until chicken is almost cooked through.

4. Now reduce the heat to low and add the cream, Parmesan, dried basil, salt, pepper, and red pepper flakes. Bring the sauce to a gentle simmer. (In the meantime, drain the pasta and reserve some of the pasta water).

5. Add the cooked pasta to the sauce and stir well, thinning the sauce with reserve pasta water, if needed. Serve immediately.

Tips for the best Rotini Pasta with Chicken

  • Salt the pasta water. This will infuse the pasta with salty flavor better than trying to add it after it cooks.
  • Cook it al dente. Because it will continue to cook when added to the ،t sauce, cook it al dente so it doesn’t become mushy.
  • Add the reserved pasta water. This water contains starch from the pasta, which will make it easier for the sauce to cling to the rotini, as well as the cork، shape of the noodles.
