  • Ground flax seeds: Mixing ground flax seeds and warm water together makes an egg-like mixture that adds moisture to the waffles and binds them together.
  • Plant-based milk: I like to use vanilla-flavored plant milk for extra flavor but plain works well, too. Use any kind of plant milk you like, such as soy, almond, coconut, or rice milk.
  • Vegetable oil: Adds some nice moisture to the waffles and helps them crisp.
  • Vanilla extract: For a delicious flavor.
  • Flour: I used all-purpose flour but w،le wheat flour works, too.
  • White and brown sugar: White sugar sweetens the waffles while brown sugar makes them crisp on the outside and moist and flavorful on the inside. You can experiment with only using white sugar, replacing the brown sugar with coconut sugar, or swapping the sugars for a sugar alternative instead, like erythritol or stevia.

  • While you wait for the waffle iron to preheat, whisk the ground flaxseed into the warm water. Set aside for 10 minutes.

Give the waffle iron lots of time to preheat! A ،t iron is key to waffles that don’t stick.

  • Whisk the plant-based milk, vegetable oil, and vanilla extract in a medium bowl.
  • In a separate large bowl, whisk the flour, both sugars, baking powder, salt, and ground cinnamon together.
  • Create a well in the center of the dry ingredients and pour in the wet ingredients and flax mixture. Gently mix until just combined.

Storage Instructions

The waffles also freeze well. Lay them on a baking sheet, freeze until they’re solid, then transfer them to an airtight container or ziplock/Stasher bag. Freeze for up to 3 months.
