- 2/3 cup best quality extra-، olive oil
- 1/3 cup best quality balsamic vinegar
- ¼ cup dark pure maple syrup
- 2 teas،s Dijon mus،
- 1 teas، salt
- ½ teas، freshly ground pepper
- 1 teas، fresh or dried tarragon, optional
- Puree garlic, oil, vinegar, maple syrup, mus،, salt, and pepper in a food processor, blender, or mini-prep until completely combined and emulsified, 25 to 35 seconds.
- Stir in tarragon if using.

To make ahead: Store in the refrigerator for up to 4 days in a tightly sealed jar. Bring to room temperature and shake well to combine before using.
