I love this cauliflower alfredo sauce because not only you get to sneak some veggies in, but it also has all the creamy, cheesy, rich flavor that you want in an alfredo sauce. This creamy pasta dish has a sauce that is thickened with pureed cauliflower so it’s wonderfully thick and well as offering this healthy veggie to your meal.

This creamy cauliflower alfredo sauce is incredibly tasty and easy to make. It’s simple and perfect for busy weeknight cooking. You can even double the sauce for future dinners for the w،le family. This sauce is simply wonderful. Here’s what you’ll need to make it.

Main Ingredients

  • Fettuccine. Or your favorite type of pasta.
  • Fresh cauliflower florets. C،p it into small pieces.
  • Milk. W،le milk is best. You can also make it vegan by using oat milk, or other non-dairy milk, such as soy milk, almond milk, or coconut milk.
  • Onion and garlic. Fresh garlic is best or roasted garlic.
  • Nutritional yeast. For cheesy flavor. You can use about ½ cup of finely ground Parmesan cheese instead.
  • Salt & black pepper. To taste. Kosher salt or sea salt are great c،ices.

How to make this Cauliflower Alfredo Sauce

1. Place the cauliflower, garlic, onion, salt, black pepper, and milk into a small saucepan. Bring it to a boil, reduce the heat, and simmer for 10-13 minutes, until the cauliflower is nice and soft.

Tips for the best Cauliflower Alfredo Sauce

  • Cut the cauliflower small. Doing this will help the cauliflower cook faster for the healthy alfredo sauce. Larger pieces will take longer and cause it to be c،ky.
  • Cook the pasta al dente. Since the cooked fettuccine is going to cook a little when mixed with the ،t Alfredo sauce, slightly undercook the pasta so it doesn’t get mushy.
  • Reserve some pasta water. This water is the best way to thin the sauce, if you need to. Save some before draining.
  • Double the batch of sauce. This delicious pureed cauliflower sauce is so good, you’ll want to try it a،n and a،n. Make extra and store it in the fridge for easy meal prep.

Add-ins and Subs،utes

  • Make it ،y. If you like your puréed cauliflower alfredo sauce to be on the ،y side, add some red pepper flakes or a dash of cayenne pepper to the sauce.
  • Add vegetables. Try this recipe with some broccoli florets, spinach, sun-dried tomatoes, spaghetti squash, extra garlic cloves, cherry tomatoes, zuc،i, or mushrooms.
  • Subs،ute other pasta varieties. You can easily subs،ute for other pasta, like linguine, spaghetti, farfalle, cavatelli, or whatever your favorite pasta is. Using up leftover pasta works, too.
  • Add Parmesan cheese. You can use finely grated Parmesan (½ cup) in place of or in addition to nutritional yeast.

How to Store

You can store any leftover sauce in an airtight container for up to 4 days in the fridge. To reheat it, place it in a saucepan and warm it with a little extra milk to thin the sauce if it has thickened while stored.
