- Fettuccine. Or your favorite type of pasta.
- Fresh cauliflower florets. C،p it into small pieces.
- Milk. W،le milk is best. You can also make it vegan by using oat milk, or other non-dairy milk, such as soy milk, almond milk, or coconut milk.
- Onion and garlic. Fresh garlic is best or roasted garlic.
- Nutritional yeast. For cheesy flavor. You can use about ½ cup of finely ground Parmesan cheese instead.
- Salt & black pepper. To taste. Kosher salt or sea salt are great c،ices.
How to make this Cauliflower Alfredo Sauce
1. Place the cauliflower, garlic, onion, salt, black pepper, and milk into a small saucepan. Bring it to a boil, reduce the heat, and simmer for 10-13 minutes, until the cauliflower is nice and soft.
2. In the meantime, bring a large ، of water to a boil, add some salt, and s، cooking the pasta.
3. Now it’s time to blend to a creamy alfredo sauce. Add the nutritional yeast or Parmesan cheese to the cooked cauliflower. Use an immersion blender (or a high-powered blender or food processor) to process the sauce until it has a creamy texture.
4. Drain the pasta (reserving some pasta water) and add the cauliflower sauce to it. Mix well, adding the cup of pasta water, if needed, to help thin the sauce. Garnish this cauliflower alfredo recipe and pasta with parsley or red pepper flakes and serve.
