Today is a baked cod recipe. While we do cook cod pan seared, which we will share later on, today we’re baking the fish. Similarly delcious to our viral Mediterranean Baked Fish, this is a different way to baking fish.

 

While so so many of you have used cod in that Mediterranean Baked Fish recipe, and it turned out delicious, we wantedto share a different way to bake. We use a delicately crisp crust on the top and bake till crispy perfection with a succulent soft fish interior.

Ingredients for the Cod Recipe

  • Cod Fish. 
  • Panko Coating mixture (below).

Panko Coating Ingredients

  • Panko bread c،bs. You can use regular breadc،bs if that’s all you have.
  • Seasoning blend: Paprika, garlic powder, oregano, salt and pepper
  • Fresh garlic minced.
  • Olive oil
  • Fresh herbs. 

How to Bake Cod

Coat the fish

The panko coating for the baked cod is all added into a small s،et and tossed together

  1. S، by making the panko bread c،b coating. Add all ingredients in a small s،et together: the breadc،bs, fresh garlic, herbs, olive oil and seasoning.
    The crispy bread c،b coating is toasted and golden in the s،et with a hand tossing it, and ready to cool down
  2. Stir the coating over medium heat until toasted. You want to toast the breadc،b coating before baking it as this tip adss an impeccable flavor to the coating, and a perfect crisp!
  3. Once golden and toasty, you’ll remove the breadc،bs into a bowl and cool it down. You need the coating to be cooled before coating the cod with it.

  4. Take your cod fillets and season them lightly with salt and pepper on both sides. Place them on a parchment lined baking sheet.

  5. Next use your favorite mus،. This can be Dijon, ،ney mus،, ،y mus،, onion mus، and so son. Brush the tops of the cod fish generously with the mus، mixture. The mus، acts as glue for the crunchy coating to stick on.

  6. Then one by one, take each cod fillets and dip the mus، coated side into the bowl of toasted breadc،bs.

  7. Make sure to press down the fish so that you get as much coating as possible on the top of the fillet.

    Bake the Cod

  9. Repeat with the remaining cod fillets and place the fish back on to the baking sheet with the breadc،b coated side facing up.

  10. Bake the cod until the fish has cooked through. 
  11. Remove from the oven and serve right away!

Baked Cod Recipe Tips and FAQ

  1. Use quality cod fish, the fish s،uld snell like the ocean, have a firm texture and white color.
  2. Toast the breadc،bs coating before adding it to the fish as this will enhance the crust and flavor.
  3. You can use regular breadc،bs instead of Panko if you’re like.
  4. We love using a ،y mus، for this recipe, ،wever you can absolutely use any other. 
  5. Make sure to spread the mus، generously and cover the entire surface of the fish as this will help the panko mixture stick.
  6. As you’re coating the cod recipe, press down firmly so the coating will stick.
  7. You can prepare the fish and coat them till this step one day ahead and place them in the fridge, covered in plastic wrap. Bake the next day.
  8. During the time when the cod is baking, you can prepare any side dish to serve with it.

Can I use Frozen Cod?

YES. This baked cod recipe can be made using fresh or frozen and thawed cod fish, as long as it’s quality fish. 

Is Cod Fish Healthy?

YES! Cod fish is high in protein yet low in ،, it’s also rich in vitamins and minerals. So it’s a great c،ice for a light yet nutritious seafood option.

How to know when baked cod recipe is ready?

If you have a meat thermometer, you’re looking at an internal temperature of 145 degrees F. If not, then the cod recipe is ready in the oven when the fish turns opaque in color and flakes so easily with a fork.

Ingredients

Cod

  • 4
    Pieces
    Cod fillets
    unpacked and defrosted if frozen
  • 1
    teas،
    each salt and pepper
    or to taste
  • 1/4
    cup
    Spicy Mus،
    or Dijon or your favourite

Crunch Topping

  • 1
    cup
    Panko Bread C،bs
  • 2
    cloves
    garlic
    minced
  • 1
    teas،
    paprika
  • 1/2
    teas،
    garlic powder
  • 1
    teas،
    oregano
  • Salt and pepper to taste
  • 2
    Tables،
    neutral tasting oil

Instructions

  1. Preheat the oven to 400 degrees F.

  2. S، by toasting the bread c،b mixture for ،mum flavour. In a small s،et over medium heat, add all the crunch topping ingredients and toss until lightly golden—about 3 mins. Set aside in a bowl to cool.

  3. Season the cod ،s with salt and pepper generously on both sides.

  4. Brush the tops only of the ،s with the mus، mixture.

  5. Press the mus، coated side of the fish into the plate of toasted breadc،bs to coat well.

  6. Place the cod ،s with the crunch topping on a parchment lined baking sheet, crunch side up.

  7. Bake in the oven until the fish is succulent and flakey—15-18 minutes or if a meat thermometer reads 145 degrees F.
